The Institutions the Bistro

There may be no more pleasurable feeling in life than walking into a restaurant and taking in the smell of wonderful food and knowing you are about to eat a great meal. Such is the feeling you get when you enter the Bistro in Gallows Bay.
For 13 years this lovely little spot has been serving up some of the most unique sandwiches and wraps on the Big Island. From fresh baked breads to homemade sauces, sliced meats and house made lemonades and juices, it’s easy to understand why their clientele remains so loyal after all these years.
“The Bistro is the tops,” Mike Taras, Owner of Caribbean Printing & Marketing (CPM), a long-time denizen of Gallows Bay, told the St. Croix Times. “The food is spectacular and the catering is fantastic!.”
The current owner is Trey Gunning who came here from Atlanta, Georgia, with his wife, six years ago and has been involved with the Bistro for the last five years, becoming sole owner three years ago. Trey has worked in the restaurant hospitality industry for 22 years. He worked as Head Chef for an Atlanta catering company, having earned a degree in hotel-restaurant management.
“We strive to provide great food and drinks while maintaining a friendly customer service oriented attitude,” Trey told the Times.
With Trey as the head, there is little doubt that the Bistro succeeds on all fronts. As soon as you walk into the restaurant you are greeted by friendly people, who no doubt take a great deal of pride and enjoyment in what they do. You can just tell it’s a fun place to work.
The menu is an exciting blend of breakfast and lunch wraps and sandwiches: Lox and bagel, Steak and egg wrap, Vegenator sandwich, General Tso chicken wrap, Asiago Roast Beef on ciabatta bun, Shrimp wrap, Chicken Pesto on focaccia bread …the list of delectables goes on and on.
“We try not to take shortcuts,” Trey said. “”Quality matters so much to us.”
The outside seating that wraps around the restaurant is the perfect spot in Gallows Bay to take in the people scene. So sit back, relax, have a wrap and one of those house blends of chai tea they brew, and watch the comings and goings of Gallows Bay. It’s sure to be one of the highlights of your day.
